Re: hot peppers, jalapeño peppers are very mild with great flavor. The bhut jolokia (ghost peppers) are my favorite in the super hot category. The others, Trinidad scorpion, Carolina reaper and habaneros are just pure brutal heat with no flavor. I would definitely go with the ghost pepper, great flavor with a heat that builds.
Shin "spicy" noodles are my favorite!!! I clear the shelf at the store every time I see them, no exaggeration. As far as hot sauce for wings and chicken nugs I like a brand called "Melinda's" I really like their Habanero wing sauce and their Ghost Pepper wing sauce, So Good.
The most ridicules hot sauce I've tried was called "Mad Dog 357" that stuff was insane.

For raw hot peppers that are locatable, not too extreme, good tasting, and diverse. I would go with jalapeño, Thai, scotch bonnet, habanero, bhut jolokia , Trinidad scorpion.

Lived in Korea for 8 years. I love Shin Raman. Here's a twist. It is also very common in Korea to put a kraft cheese slice in it. The cheese gives it a creamy and completely different twist to it.

I love the brand of the last ramen. Their other flavors are great but have great heat as well (not as hot as this 2x spicy though).
